Ingredients

  • 1 1/4 lb turkey breast cutlets
  • 1 bunch asparagus
  • 2 lemon
  • 3 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 3/4 cup chicken broth
  • 3 clove garlic
  • 2 tbsp extra virgin olive oil
  • 1 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Method

  1. Heat the oven to 425F. Toss the trimmed asparagus with 1 tablespoon olive oil and salt and roast 12 minutes.

  2. Season the cutlets with salt and pepper and dredge them lightly in flour.

  3. Sear in the remaining olive oil over medium-high, 3 minutes per side, until golden. Move to a plate.

  4. Add the minced garlic to the pan for 30 seconds, then pour in the broth and the juice of one lemon. Simmer 3 minutes.

  5. Swirl in the butter off the heat until the sauce is glossy.

  6. Spoon the sauce over the cutlets and serve with the asparagus and lemon wedges.
