Turkey and Rice Stuffed Peppers
Bell peppers filled with ground turkey, rice and tomato, baked until soft under cheese.

Ingredients
- 1 1/4 lb ground turkey (93% lean)
- 4 red bell pepper
- 3/4 cup long grain white rice
- 1 yellow onions
- 3 clove garlic
- 2 tbsp extra virgin olive oil
- 15 oz canned tomato sauce
- 2 tsp italian seasoning blend
- 5 oz shredded mozzarella
- 1 1/2 tsp kosher salt
Method
Cook the rice until just done. Heat the oven to 375F.
Halve the peppers lengthwise, remove the seeds and set them cut side up in a baking dish.
Brown the turkey with the diced onion in the olive oil, then add the garlic, italian seasoning and salt.
Stir in the cooked rice and about two thirds of the tomato sauce.
Fill the pepper halves, spoon the remaining sauce over and add a splash of water to the dish. Cover with foil.
Bake 35 minutes, then uncover, top with mozzarella and bake 10 minutes more.
