Vegetable Fried Rice
Cold rice fried with egg, peas, carrots, and scallions in a quick soy toss.

Ingredients
- 2 cup long grain white rice
- 4 large eggs
- 12 oz frozen mixed vegetables
- 3 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 2 tbsp vegetable oil
- 3 clove garlic
- 1/2 oz fresh ginger root
- 1 bunch green onions / scallions
Method
Cook the rice ahead and chill it. Cold rice is the whole trick here.
Heat 1 tablespoon vegetable oil in a wide skillet over high. Pour in the beaten eggs and scramble until just set, then move them to a plate.
Add the remaining oil and the frozen vegetables. Stir-fry 4 minutes until hot and any water has cooked off.
Add the minced garlic and grated ginger for 30 seconds.
Add the cold rice, breaking up clumps, and stir-fry 4 minutes until it starts to crisp in spots.
Return the eggs, add the soy sauce and sesame oil, and toss with the sliced scallions.
