Skillet Chicken Pot Pie with Biscuits

Ingredients
- 1 1/4 lb boneless chicken thighs
- 8 refrigerated biscuit dough
- 12 oz frozen mixed vegetables
- 2 cup chicken broth
- 1 cup whole milk
- 1/3 cup all-purpose flour
- 4 tbsp unsalted butter
- 1 yellow onions
- 1 tsp dried thyme
- 1 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
Method
Heat the oven to 400F.
Melt the butter in a large oven-safe skillet over medium. Cook the diced onion 5 minutes, then add the chicken cut into cubes and cook 6 minutes until no longer pink.
Sprinkle in the flour, thyme, salt, and pepper and stir for 1 minute.
Slowly whisk in the broth and milk. Simmer 4 minutes until thickened, then stir in the frozen mixed vegetables.
Arrange the biscuit rounds over the top of the filling.
Bake 20 to 22 minutes until the biscuits are browned and cooked through. Let stand 5 minutes before serving.
