Vietnamese-Style Fried Egg Baguette
A crisp baguette stuffed with fried eggs, quick-pickled carrot, cucumber, and cilantro.

Ingredients
- 1 french baguette
- 6 large eggs
- 1/2 lb carrots
- 1 cucumber
- 4 tbsp white distilled vinegar
- 1/4 cup granulated white sugar
- 4 tbsp mayonnaise
- 1 tbsp soy sauce
- 1/2 bunch cilantro
- 1 jalapeño peppers(optional)
- 2 tbsp vegetable oil
Method
Cut the carrots into matchsticks and toss them with the vinegar, sugar, and a pinch of salt. Leave them 15 minutes, stirring once, until they soften and turn tangy.
Cut the baguette into four lengths and split each one, leaving a hinge.
Fry the eggs in the oil over medium-high heat until the edges are crisp and the yolks still soft.
Spread mayonnaise inside the bread and add a few drops of soy sauce.
Layer in the eggs, drained pickled carrot, sliced cucumber, cilantro, and chile.
Press each sandwich closed firmly so the yolk runs into the bread.
