Ingredients

  • 1 french baguette
  • 5 tbsp salted butter
  • 4 large eggs
  • 3/4 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 oz ground coffee
  • 1 cup whole milk
  • 3/4 lb bananas

Method

  1. Cut the baguette into four lengths and split them open.

  2. Melt most of the butter in a wide skillet and press the bread cut side down. Toast 3 minutes until the surface is golden and the butter has soaked in.

  3. Fry the eggs in the remaining butter, seasoning with salt and pepper.

  4. Lay an egg inside each piece of bread.

  5. Brew the coffee strong and heat the milk, then combine them roughly half and half.

  6. Serve with sliced banana on the side.
