Crisp Baked Wings in Cayenne Butter

Ingredients
- 3 lb chicken wings
- 2 tsp baking powder
- 4 tbsp unsalted butter
- 1 1/2 tsp cayenne pepper
- 2 tsp hot sauce (louisiana style)
- 1 tbsp white distilled vinegar
- 1 tsp garlic powder
- 1 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/2 bunch celery(optional)
Method
Heat the oven to 425F and set a wire rack inside a baking sheet.
Pat the wings as dry as you can. Toss them with the baking powder, salt, pepper and garlic powder until evenly dusted. The baking powder is what dries the skin and makes it crisp without frying, so do not skip it.
Lay the wings on the rack without crowding and bake 45 to 50 minutes, turning once, until deep golden and crisp.
Melt the butter in a small pan with the cayenne, hot sauce and vinegar and whisk until glossy.
Tip the hot wings into a bowl, pour the butter over, and toss until every one is coated.
Serve straight away with celery sticks.
