Chicken, Green Bean and Rice Bake

Ingredients
- 1 1/2 lb boneless chicken thighs
- 1 cup long grain white rice
- 10 1/2 oz condensed cream of mushroom soup
- 14 1/2 oz canned green beans
- 1 1/2 cup chicken broth
- 1 yellow onions
- 3 clove garlic
- 2 tbsp unsalted butter
- 4 oz shredded cheddar cheese
- 1 tsp dried thyme
- 1/2 tsp ground black pepper
- 1 tsp kosher salt
Method
Heat the oven to 375F. Melt the butter in a skillet and cook the diced onion and minced garlic over medium heat until soft, about 5 minutes.
Stir the soup, broth, thyme, pepper and half the salt into the skillet until smooth, then take it off the heat.
Spread the uncooked rice in a 9x13 baking dish. Drain the green beans and scatter them over the rice.
Cut the chicken into 1-inch pieces, season with the remaining salt, and lay them on top. Pour the soup mixture over everything and spread it level.
Cover tightly with foil and bake 40 minutes. Uncover, scatter the cheddar over the top, and bake 12 to 15 minutes more until the rice is tender and the cheese is browned.
Let it stand 10 minutes before serving so the sauce sets.
