Chicken Noodle Soup from a Whole Bird

Ingredients
- 4 1/2 lb whole chicken
- 8 oz egg noodles
- 1 lb carrots
- 1/2 bunch celery
- 1 yellow onions
- 4 clove garlic
- 2 bay leaves
- 1 tsp dried thyme
- 1/4 bunch fresh flat-leaf parsley
- 2 tsp kosher salt
- 1 tsp ground black pepper
Method
Put the whole chicken in a large pot with the halved onion, the smashed garlic, the bay leaves, thyme, a teaspoon of the salt and enough cold water to cover it by an inch.
Bring it slowly to a bare simmer and skim off the grey foam that rises in the first ten minutes. Simmer gently, never boiling, for 70 minutes.
Lift the chicken out onto a board and let it cool enough to handle. Strain the broth and return it to the pot, discarding the aromatics.
Pull the meat off the bones in bite-sized pieces and discard the skin and carcass.
Bring the broth back to a simmer with the carrots in coins and the celery sliced. Cook 8 minutes, then add the noodles and cook 6 minutes more.
Return the chicken to the pot to warm through, season with the rest of the salt and the pepper, and finish with chopped parsley.
