Roast Chicken with Rosemary Potatoes

Ingredients
- 4 1/2 lb whole chicken
- 2 lb russet potatoes
- 1 lb carrots
- 1/3 oz fresh rosemary
- 1/3 oz fresh thyme
- 6 clove garlic
- 3 tbsp extra virgin olive oil
- 1 lemon
- 2 tsp kosher salt
- 1 tsp ground black pepper
Method
Heat the oven to 425F. Pat the chicken dry inside and out and let it sit at room temperature while the oven comes up.
Cut the potatoes into 1-inch chunks and the carrots into thick coins. Toss them in a roasting pan with 2 tablespoons of the olive oil, the smashed garlic cloves, half the rosemary and thyme, and a teaspoon of the salt.
Rub the chicken all over with the remaining oil, then season inside and out with the rest of the salt and the pepper. Halve the lemon and put it in the cavity along with the remaining herbs.
Set the chicken breast-side up on top of the vegetables. Roast for 70 to 80 minutes, until the thigh juices run clear and the skin is deep brown.
Move the chicken to a board and let it rest 15 minutes. Stir the vegetables in the pan juices while it rests.
Carve and serve with the potatoes and carrots, spooning the pan juices over everything.
