Lemon Garlic Sheet-Pan Chicken and Potatoes
Bone-in thighs roast over potatoes and green beans until the skin crisps and the pan juices go golden.

Ingredients
- 2 1/2 lb bone-in chicken thighs
- 1 1/2 lb yukon gold potatoes
- 3/4 lb fresh green beans
- 3 tbsp extra virgin olive oil
- 6 clove garlic
- 2 lemon
- 2 tsp dried oregano
- 2 tsp kosher salt
- 1 tsp ground black pepper
Method
Heat the oven to 425F. Cut the potatoes into three-quarter-inch chunks.
Toss the potatoes with 2 tablespoons olive oil, the minced garlic, oregano, half the salt, and the pepper. Spread on a large sheet pan.
Rub the chicken thighs with the remaining oil and salt and nestle them among the potatoes, skin side up. Tuck in thin slices of one lemon.
Roast 25 minutes.
Scatter the trimmed green beans around the pan and roast 12 to 15 minutes more, until the chicken reaches 175F and the potatoes are tender.
Squeeze the second lemon over everything before serving.
