Ingredients

  • 16 oz extra-firm tofu
  • 2 tbsp cornstarch
  • 3 tbsp vegetable oil
  • 1 red bell pepper
  • 12 oz frozen broccoli florets
  • 3 clove garlic
  • 3/4 oz fresh ginger root
  • 1 tbsp curry powder
  • 13 1/2 oz canned coconut milk
  • 2 tbsp soy sauce
  • 1 1/2 cup jasmine rice
  • 1 lime

Method

  1. Cook the rice. Press the tofu dry, cube it and toss with the cornstarch and a pinch of salt.

  2. Fry the tofu in 2 tbsp oil until browned on several sides, then set aside.

  3. Cook the sliced pepper in the remaining oil 3 minutes, then add the garlic, grated ginger and curry powder.

  4. Pour in the coconut milk and the frozen broccoli and simmer 8 minutes.

  5. Return the tofu, add the soy sauce and warm through.

  6. Finish with lime juice and serve over the rice.
